Brussel Sprout and Radish Flat Bread

My second recipe is one of my favourites! This Brussel Sprout and Radish flat bread was absolutely delicious and was super easy to make. I love roasting Brussel Sprouts and especially Radishes- it brings out this peppery and sweet caramel flavour in the vegetables that work really well with this dish.7

I made a carrot Hummus for this flat bread but of course you can use any Hummus for this dish! Without the Yogurt sauce on top and this dish is Vegan or alternatively use a Vegan Soy/Coconut based Yogurt for a completely plant based dish.

Ingredients:

Pack of Sprouts (Chopped length ways and tops trimmed)

Pack of Radishes (Tops trimmed and cleaned)

2 tbsp. Pomegranate Molasses

2 tbsp. Zaatar ( I use Spice Kitchen’s Zaatar)

1 x Clove of Garlic (chopped)

Mix all of the above in a oven proof dish with a little salt and pepper with some Olive Oil. Cook for 30-40 minutes once all the vegetables are soft, giving it a mix in between to cook the vegetables evenly. Whilst the Sprouts and Radishes are roasting, time to make the Hummus and the Yogurt Sauce.

Carrot Hummus:

Boiled and Chopped 3 Carrots (then drain once cooked)

Juice of 1/2 a Lemon

Olive Oil

1 x Peeled clove Garlic

2 tbsp. Tahini

In a food processor/mini chopper blend all of the carrots with the juice of a lemon and garlic. Get the consistency you want by making the Hummus smoother by adding more Olive Oil gradually. Season with Salt and Pepper.

Yogurt Sauce:

Juice 1/2 a Lemon

1/2 Tsp of Turmeric

4 Tbsp Natural Yogurt

In a food processor or by hand mix all of the Yogurt with the Lemon juice and Turmeric until mixed in well. Season to taste and put aside for assembling later.

Assembling:

Once your veggies, hummus and Yogurt sauce are all done- it’s time to assemble the flat bread. Tip: If you are doing this for a starter/sharer- slice your flat bread before assembling so everyone can grab even bits of the flat bread.

On top of the flat bread spread your Carrot Hummus evenly, adding a sprinkling of Zaatar. Top with your roasted Sprouts and Radishes, then drizzle with your Yogurt sauce. Not only does this taste good but it looks good too! Add some Pomegranate seeds for some extra texture and beautiful pink tones in the dish, alongside some freshly chopped Parsley for extra freshness. Delicioussssss!
