Fake away Salt and Pepper Chicken

Just the ticket for when you are craving those take away feels but don’t want to be disappointed by a rubbish takeaway and also to save the pennies! Make this at home and feel satisfied like you have had a naughty takeaway but don’t feel rubbish after you eat it.

Ingredients (makes 1 main portion or feeds 2 for a side dish):

1 x Chicken Breast

1 Small onion thinly sliced

2 x Cloves of Garlic

1 tbsp of Dried Chilli Flakes

1 tbsp 5 spice powder

1/2 Bunch of Spring Onions roughly chopped

1 x Red Pepper thinly sliced into strips

Salt and Pepper to taste

Make a batter: In a container make a small batter using flour, cold water and season with a bit of Salt and Pepper.

Method:

  1. Chop your chicken breasts and get a wok with quite a bit of oil ready for shallow frying.

  2. Test the oil with a bit of batter and it will be ready once the batter is cooking.

  3. Batter and cook the chicken by frying in batches and blot onto kitchen paper to get excess oil.

  4. Once all the chicken is cooked- drain the oil into a container to keep the hot oil.

  5. Leaving a bit of oil in the wok, fry off the garlic, onion, red pepper and chilli flakes.

  6. Add the 5 spice powder, salt and pepper.

  7. Add the chicken pieces and fry with the spring onions coating the chicken with all the salt and pepper goodness.

  8. Try a piece and if you want it saltier- add more salt/ chilli/ pepper for more heat.

  9. Eat with rice and some greens and that’s a delicious fakeaway!
