Spicy Pork and Wild Garlic stir fry

Spicy Pork and Wild Garlic stir fry

Spicy Pork and Wild Garlic stir fry for the ultimate comfort food and especially whilst its Wild Garlic season and the herbs are rife this time of year. I made this the other day because I have so much wild garlic at home right now to use.

What you need:

2 x Fresh Chillies

2 x Garlic cloves

50g Pork Mince

Handful of Wild Garlic

1 Thumb sized piece of Ginger

Bunch of Coriander stalks *I had some leftover dont worry if you haven’t got any

1 x Carrot

2 x Stalks of Spring Onion

1 tbsp. Sesame Oil

1 x Egg

1 tbsp. Ketchap Manis

Method:

  1. Using a food processor or a pestle and mortar, make a paste using the ginger, coriander stalks, garlic, chilli, spring onion and carrot. Mix this in with the pork.

  2. Mix the Sesame oil in with the paste and pork mix and the Ketchap Manis (sweet soy) or use normal soy. Leave the pork to marinade for about 20 minutes.

  3. Once the pork has marinaded, get a frying pan hot with a bit of oil.

  4. This wont take long so if you need some rice with your dish have that ready beforehand.

  5. Cook the pork and cover your hot piping rice with the porky deliciousness and top with a fry egg! Add more ketchap manis/soy sauce ontop for your rice. Enjoy xx
