Easy Banana Stack Pancakes

Why have I called these Banana Stack Pancakes? Coz they STACK. They are fluffy, so tasty and make me to reminiscent of the Banana pancakes I had in The Philippines. These are my go to Pancakes for when I want something sweet but not too sweet. Also this recipe only uses 1 egg which is fab as lots of other recipes usually use loads and I cannot bare to part ways with so many sometimes!

What you will need:

130g Plain Flour

130g Milk

1 tsp Baking Soda

1 tsp Cinnamon (plus extra for dusting after)

1 tsp Vanilla Essence

1 x Banana

1 tbsp x Sugar

1 x Egg

2 tbsp Olive Oil

Optional- Honey for Topping and butter*

Method:

  1. In a bowl whisk together your Egg, Olive Oil, Sugar, and Milk.

    Mix your Baking Soda into your flour in a separate bowl.

  2. Gradually add your flour and Baking soda mix in and get the batter consistency smooth.

  3. Optional- but I chop half of the banana into small chunks and add it into the batter- so you get bits of Banana inside the pancake! If not, just add your Cinnamon, Vanilla and Essence and whisk this into the batter.

  4. Once your batter is smooth, it’s now ready to to make those stacks.

  5. In a non stick Pan get a little bit of oil and get your pancakes on the go! I usually use a ladle and out of this mixture I get about 3-4 big pancakes in a stack.

  6. Flip your pancakes when you see the air pockets and bubbles surround all of the outside and the middle of the pancake. Repeat this until you use all the mixture!

  7. Add your leftover Banana slices or your Banana on top and in between each stack.

  8. Drizzle Honey and spread a bit of butter in between each pancake and a sprinkling of Cinnamon! voila, tasty and Easy Banana Stack Pancakes!
