Cooking with leftovers - Basa Gede Noodles

These noodles were extremely deliclious and guess what? Were made with leftovers! I roasted a whole Chicken in Basa Gede- a Balinese Spice Paste that is the best and freshest curry flavour. I had some leftover and came up with this creation - and I must say, it's one of my best kitchen raid dinners I've done in a long time. 


First things first - make yourself some Basa Gede spice paste. I got this from the BBC good food site. 


¾ tsp black peppercorns¼ nutmeg, freshly grated15g candlenuts, macadamia nuts, cashew nuts or roasted peanuts½ tsp sesame seeds30g shallots, roughly chopped15g ginger, peeled and roughly chopped20g galangal (or extra ginger), peeled and roughly chopped7g fresh turmeric, peeled, or ½ tsp dried turmeric1 ½ fat lemongrass stalks, hard outer leaves removed, core chopped3 large garlic cloves1 medium-hot red chilli, deseeded and roughly chopped2 red bird's-eye chillies, roughly chopped½ tsp shrimp paste1 ½ tsp palm sugar1 ½ tbsp vegetable oiljuice ¼ lime


  1. Grind the peppercorns, nutmeg, nuts and sesame seeds to a fine powder in a spice grinder. Put the mixture in a food processor, add the remaining ingredients with 1 /2 tsp salt and blend to a very smooth paste. Will keep in the fridge for 2 weeks


    For the noodles

    1x heaped tablespoon of Spice paste, Prawns, Leftover shredded Chicken, Cauliflower leaves, 2x Spring Onions chopped, 1x Stem Celery thinly sliced, 1 tsp Dried Chilli Flakes, Handful of Rice noodles or noodles of your choice, 1 tbsp Ketchap Manis, 1x tbsp Xiaoxing rice wine and 1 cup of Water. 

    -In a Wok fry your spice paste out in a little veg oil . Add your prawns in and the Xiaoxing Rice Wine. 

     -Add your chopped Cauliflower leaves and celery, stirr fry for a few minutes and then add the chilli flakes and shredded Chicken. 

      -Put your rice noodles/noodles of choice then top with some water and get a lid on  . The steam will cook the noodles but keep adding the water until the noodles are soft. 

      -Take the lid off and coat the noodles evenly with the prawns chicken and Basa Gede goodness. Add your spring onions and Ketchap Manis. Take off the heat and give it another stir! 

     Serve with a slice of lime and some crushed peanuts ontop- delicious! You can make this vegan and just forget the prawns and chicken altogether! Enjoy xxx
